Last Minute Gift DIY: Cranberry Pecan Pancake Mix

Christmas is just two days away, so hopefully most of you have already finished all your shopping. But for you procrastinators out there, or for those who just realized you forgot to get something for your Great Aunt Helen, here's is an easy and delicious last minute Christmas Gift DIY: Cranberry Pecan Pancake Mix!


Cranberry Pecan Pancake Mix

Yield: About 5 batches of pancakes (8 pancakes per batch)

Ingredients:

Pancake Mix:
6 cups flour
4 tablespoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
6 tablespoons granulated sugar
1 1/3 cup chopped pecans
1 1/3 cup dried cranberries

Pancakes:
1 1/3 cup pancake mix
1 cup milk
1 egg, beaten
2 tablespoons melted butter

To make the mix: Use a whisk or a fork to toss the flour, baking powder, baking soda, salt and sugar together until very well combined. Pour 1 1/3 cup of pancake mix into a one quart mason jar (I used a funnel) then layer 1/3 cup of cranberries and 1/3 cup of pecans on top. Mix will keep for up to 3 months.


I attached the instruction labels I created (download here) with some kitchen twine. 

To make the pancakes: Combine 1 1/3 cup mix with 1 cup milk and 1 beaten egg. Add 2 tablespoons melted butter and whisk to combine. Fold in pecans and cranberries. Pour batter into a hot buttered skillet and cook until golden and delicious.
