Southern Pimento Cheese

Say what you want about the South, they know how to eat. A few years back I realized that pimento cheese was actually good; growing up I never tried it because I didn't like how orange it was. Perhaps it isn’t the best looking food around, but it sure does taste delicious. Even better, it takes literally 10 minutes to prepare. You can serve your pimento cheese at room temperature with some crackers and crudities or use it in sandwiches. If you’re really feeling like treating yourself, spread it on a burger. You will not be disappointed!


Southern Pimento Cheese 
Makes 3 cups

Ingredients:
1 (8-ounce) package cream cheese, room temperature
1 cup grated sharp cheddar
1 cup grated Monterey Jack
1/2 cup mayonnaise
1/4 teaspoon of salt
1/4 teaspoon of garlic powder
Small jar of pimentos, drained and smashed with a fork
1 teaspoon grated onion
Hot sauce (I used just a few drops, but if you like it hot, add more!)
Cracked black pepper

Directions:
Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended.

Did I mention pimento cheese is amazing on burgers?
This stuff keeps forever (up to 6 months), so don’t worry about the fact that you now have 3 cups of pimento cheese. Believe me, you'll use it up pretty quickly!
