Summertime Watermelon Salsa

BBQ season has begun, and I think it may be my favorite season of them all. As I am sure you know, a good BBQ guest does not arrive empty-handed. A tasty dip or salsa is always a welcome addition to any BBQ menu. I usually stick to my usual guacamole, which is indeed delicious, but this past Memorial Day I wanted to mix it up a little. Enter watermelon salsa.


I know I love a watermelon gazpacho, so when I saw this recipe from Pioneer Woman, I knew I was in business. Being an independent woman, I made the recipe my own with a few ingredient changes and additions. I think it turned out great! Here's my take on watermelon salsa.


You will need:

1 "personal" seedless watermelon

1 yellow bell pepper

1 red bell pepper

1 small red onion

2 fresh jalapeƱos

1 bunch cilantro

1 tsp garlic salt

1 tsp chipotle powder

Dice the watermelon, peppers, red onion, and jalapeƱos and toss with your chopped cilantro, garlic salt, and chipotle powder. That's it! Serve with your favorite tortilla chips and enjoy.
