Super Cheese Ball

The Super Bowl was always a big deal in our house growing up. Not because we were huge football fans, but because my Mom always pulled out all the stops for her Super Bowl spread. The usual menu included potato skins, dill dip, a relish tray, shrimp cocktail, and always, without fail, a cheese ball. To this day it doesn't really feel like a Super Bowl party to me without one.


Super Cheese Ball

Ingredients:

8 oz cream cheese
8 oz Kaukauna spreadable cheddar, sharp
4 oz blue cheese
1 tbsp grated onion
1/2 tsp kosher salt
1/2 tsp Worcestershire sauce
3/4 cup finely chopped pecans (toasted)
2 tbsp chopped, fresh parsley

Let the cream cheese, cheddar cheese, and blue cheese come to room temperature. Then, using an electric mixer, combine the cheeses. Add onion, Worcestershire and salt, and mix again until combined.

Using a spatula form cheese into a ball. Line a small soup bowl with plastic wrap and then place cheese ball in the bowl. Cover with the plastic wrap and chill for at least 2 hours or overnight.

Sprinkle chopped parsley and toasted pecans over a flat surface, Roll chilled cheese ball in the pecan mixture. Serve at room temperature with crackers or crudités.
