What's your favorite Thanksgiving dish? Some people like dressing, some people are all about green bean casserole, and some people just come for the turkey. I really like it all, but what I look forward to the most are the sweet potatoes. I'm not talking about canned yams topped with melted marshmallows; I crave sweet potatoes baked to fluffy perfection, mashed with butter and sugar, and topped with a crunchy pecan topping. Sweet enough for dessert but served as a side dish: this is the only sweet potato recipe you need.
Sweet Potato Casserole with Pecan Topping
Serves about 8
Ingredients:
For the sweet potatoes:
4 medium sweet potatoes
1 cup sugar
1/4 cup milk
1 tsp vanilla
1/2 cup butter, melted
2 eggs, beaten
For the topping:
1/2 cup light brown sugar
1/4 cup melted butter
1/3 cup flour
1/2 cup chopped pecans
Directions:
Bake sweet potatoes at 400 degrees for 40-60 minutes, until easily pierced with a fork. Allow potatoes to cool until easy to handle, then peel and mash.
Combine sugar, milk, vanilla, butter and eggs, then stir into the potatoes. Pour into a 2 quart casserole dish.
Mix topping ingredients and spread evenly over potatoes. Bake at 350 degrees for 30 minutes.
